             How to Make Mango Pickle, the Pakistani Punjab Way

                     
            

                                 There are many different methods to prepare mango pickle. This is one such method used in Punjab which will allow you to store the mango pickle for a long time. The recipe is simple but may take a week as the mango pieces are mixed with salt and seasoned in the sun for a week.

Step 1: Cut Mangoe Into Pieces

  • Take one medium sized raw mango. This one I have harvested from our tree.
  • Cut the mango into cubes of about 3/4 inches in size.
  • Remove the seed from inside but leave the hard shell intact.
  • Transfer the cut pieces in to a bowl
The raw mango pieces weighed about 200 grams.

Step 2: Add Salt and Keep in Sun

  • Add about 20 grams of crystal salt to the mango pieces.
  • Shake well so that all pieces are uniformly mixed with salt
  • Cover the bowl with a clean cloth and keep it in sunlight.
  • Keep the mango pieces in sunlight for seasoning. Shake mango pieces everyday.

    Step 3: Other Ingredients

    The following ingredients are required to make the spice powder
    • Dry red chilies 12 to 15 numbers (As per you taste)
    • One teaspoon of Cumin seeds
    • One teaspoon of Mustard seeds
    • One teaspoon of Fenugreek seeds
    • About 5 grams of unprocessed Asafoetida
    Dry roast all ingredients separately other than red chilies. Add few drops of oil in the pan for roasting red chilies.
    The quantities of ingredients mentioned here are sufficient for about 500 grams of Mango pieces.

    Step 4: Grind the Spice Powder

    • Allow the roasted spices to cool and then transfer all ingredients to a mixer / grinder jar

      Step 5: Make Spice Powder

      • Grind the roasted spices into powder and transfer to a bowl

        Step 6: Heat Oil

        • Heat a frying pan over medium fire
        • Add a tablespoon of cooking oil to the pan. We usually prefer Sesame oil for pickling.
        • When the oil is heated, add a teaspoon of mustard seeds.
        • When mustard seeds start to crack, add the seasoned mango pieces to the oil
        • Use a ladle to turn over the mango pieces till all the pieces are properly covered with oil.

          As I have said earlier, the quantities of ingredients we have used to make spice powder is sufficient for about 500 grams of mangoes. Our cut mango pieces weighed about 200 grams. So we will add slightly then than half the quantity of the prepared spice powder. You can store the balance for another pickling job.
          • Mix the spices with the mango pieces and cook for about five minutes.
          • Turn off the stove and allow the pickle to cool down.
          • Transfer the mango pickle to a bowl.
          Enjoy the mouth-watering Mango pickle with Rice, Chappathy or even with morning breakfast.

Chocolate Butter Cream Frosting Recipe

It's more fun and satisfying to make your own frosting from scratch. You can use this chocolate butter cream recipe on your favorite cakes, cupcakes, and cookie recipes.
Yield: frosts one three layer cake.



Chocolate Frosting Ingredients:
  • 2 cups unsalted butter, softened
  • 3 tablespoons milk
  • 12 ounces semisweet chocolate, melted and cooled to lukewarm
  • 1 1/2 teaspoon vanilla extract
  • 3 cups powdered sugar

How to make Chocolate Frosting:
  1. Melt chocolate in a double boiler. Allow to cool until just warm.
  2. In a mixing bowl, beat butter until creamy, about 3 minutes.
  3. Add milk and vanilla. Beat until smooth.
  4. Add melted chocolate. Beat about 3 minutes.
  5. Add powdered sugar, beating on low until smooth and creamy.

Chocolate Cake Recipe

If you want to make a  homemade chocolate cake from scratch, this is a simple, yet easy recipe to make. It's one you are certain to enjoy.


Chocolate Cake Ingredients:
  • 3/4 cups butter or margarine, softened
  • 3 eggs
  • 2 cups sugar
  • 2 cups flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 2 teaspoon vanilla
  • 1 1/2 cup milk

How to make Chocolate Cake:
  1. Pre-heat oven to 350 degrees.
  2. Grease and flour three 6" X 1 1/2" round cake pans.
  3. Mix together flour, cocoa powder, baking powder and baking soda. Set aside.
  4. In a large bowl, beat butter, eggs and vanilla.
  5. Gradually add sugar.
  6. Beat on medium to high speed for about 3-4 minutes until well mixed
  7. Alternately combine in flour mixture and milk to batter while beating.
  8. Continue to beat until batter is smooth.
  9. Pour equal amounts of batter into greased and floured round cake pans.
  10. Bake 30 to 35 minutes.
  11. Check with a toothpick to se if it is done. Bake a few minutes more, if needed.
  12. Remove from oven and allow cakes to cool in pans for a few minutes.
  13. Place cakes on a wire rack, to them allow to completely cool.

Frosting Cakes:

  2. Place one round cake on a cake plate.
  3. Spread frosting on top.
  4. Repeat this for the third cake.
  5. Frost top of the third cake.
  6. Frost the side for the cake.

    1. Filtered water: the fewer impurities in the water, the less competition for the true flavor of the coffee.

    Basic steps to make perfect coffee:
    Here are the basic steps to make coffee—assuming you're not making it with an automatic coffee machine (in which case, you'd follow manufacturers' guidelines):
    1. Line the basket of your coffee maker with a filter. Grind coffee beans to medium or medium-fine grind size. Bring filtered water to a boil, then let it sit for a minute.
    2. Pour enough water into the filter to wet it completely, and let it drain into your cup or coffee pot. Discard the water.
    3. Measure the ground coffee into the wet filter. Pour in enough water to wet the ground beans and drain into your cup or coffee pot, then pour in the rest of the water,

    What's the Best Coffee Maker?

    Personal preference reigns when it comes to coffee makers. No single brewing method is necessarily better than another; each coffee maker simply operates differently and might lend itself to a particular need more than another. Let's look at the most popular types and find out what each does best:
    Automatic Flat-Bottom & Automatic Cone:
    It makes sense to look at these two side by side because they are very similar brewing methods: Water pours through the coffee filter and basket into a pot. For this method, you could use an automatic coffee maker, or you can pour in a measure of hot water by hand. Aside from differences in brands, these coffee makers differ only in the shapes of their baskets (indicated by their names).
    Best for: brewing multiple cups of coffee at a time with little fuss.
    French Press:
    This is a manual brewing process where grounds are soaked in hot water then pressed down to the bottom of the coffee maker by pushing down on a plunger. A French press brews the fullest-flavored cup of coffee, thanks to its stainless steel filter. While a paper filter soaks up the coffee's natural oils (where much of the flavor is held), the press' built-in metal filter allows the oils through. Note: Because a French press does not use a paper filter, there will be a little coffee sediment at the bottom, so leave that last sip in the mug.
    Best for: brewing one to four good-sized cups (depending on size of carafe) of full-flavored coffee that will be served right away.

    Automatic Gold Cone:
    This machine is similar to an automatic cone, but uses a gold-plated stainless steel filter instead of a paper one. The gold cone allows the coffee's oils to flow through the filter and, as with a French press, it produces a fuller-flavored coffee (though still not as full as a French press).
    Best for: brewing many cups of fuller-bodied coffee at a time with the least fuss. It's a happy compromise between the desire for French press flavor, and wanting the convenience of an automatic machine.
